#TasteAB Mission Inspiration: Enjoy local Alberta chicken in your dishes
Chicken Producer and current Chair of Alberta Chicken, Erna Ference, has run a chicken farm near Black Diamond, Alta., for over two decades along with her husband Reg and their family. Now, the Ferences run two farms raising around 110,000 chickens every 8 weeks. Modern agriculture and animal care programs are very important, Erna explains, adding that Alberta's industry is very progressive. "The chicken industry is always trying to improve things, we're always moving forward." As for enjoying the chicken they raise, there is no shortage of ways to enjoy the versatile bird. "We like chicken a number of ways in our house," says Erna who recommends incorporating garden vegetables such as snow peas, onions and squash into a chicken stir-fry. "Wraps as well, they're a great way to use leftover chicken or for a quick dinner fix. You can broil or barbecue the chicken breast and slice it up with peppers, onions, tomatoes or salsa. Then you have a quick meal."
